Summer rolls are a weeknight staple here at Eliot’s HQ. Especially when the temperatures get warm and no one feels like cooking! Use what salad ingredients you have on hand, wrap in rice paper and mix up a quick peanut sauce. Then kick up your feet, sip a cold drink and enjoy this delicious, simple and healthy meal.
Ingredients
Rolls

1 package rice paper wrappers

lettuce, shredded

carrot, shredded

cucumber, cut into matchsticks

cilantro
-
basil
-
mint
-
Protein of choice: tofu, poached shrimp or pork are great choices
Peanut Sauce

1/2 c Eliot's peanut butter (Spicy Thai, Honey Chipotle or Classic Salted)

1/4 c Lime juice, fresh squeezed is best!

2 tbsp Rice wine vinegar

2 tsp Sugar (or you favorite sweetener)
Dip a sheet of rice paper a third of the way into a bowl of hot water for about 2 seconds. Turn it and dip remaining section, then lay on a damp towel. Working on bottom third of rice paper, spread a bit of lettuce, carrots,cucumbers, herbs and protein. Fold up bottom edge to cover, then fold in the sides. Roll tightly. Continue with remaining ingredients. Combine peanut butter, lime juice, rice wine vinegar and sugar. Taste and adjust seasoning to taste. Serve rolls right away, or refrigerate, lightly covered, up to 2 hours. Enjoy!
