Ingredients
Noodles

8 oz package soba noodles

2 small cucumbers, sliced

3 scallions, thinly sliced

2/3 c chopped cilantro

1 c  shelled edamameÂ

Toasted sesame seeds for top
Peanut SauceÂ

1/2 c Eliot's peanut butter (Spicy Thai, Honey Chipotle and Classic Salted)

1/4 c lime juice
-
2 Tbsps soy sauce
-
2 Tbsps rice vinegar
-
1 Tbsp honeyÂ

1 Tbsp sesame oil

1/2 grated ginger
Cook soba noodles until al dente, according to the package instructions. Drain completely and rinse will cold water until chilled. Set aside. While the noodles cook, prepare the peanut sauce by whisking all the ingredients together until combined. In a large mixing bowl combine noodles, cucumbers, scallions, cilantro, edamame and peanut sauce. Toss to evenly to combine and adjust seasoning to taste. Serve topped with sesame seeds. Enjoy!
