Overnight oats are a classic and for good reason. These oats are easy to put together, packed with good ingredients and can be customized to your taste. While it’s hard to improve on a classic, may we suggest swirls of peanut butter?! Our easy overnight oats recipe contains just five ingredients and will come together in five minutes. So take your favorite jar of Eliot’s nut butter and get mixing!
Ingredients
-
1/2 cup milk or milk alternative
-
1 Tbsp chia seeds
-
2 Tbsp Eliot’s nut butter - Espresso Nib is especially good here!
-
1 Tbsp brown sugar ( or maple syrup, honey, etc.)
-
1/2 cup rolled oats
In a small jar or bowl with a lid, combine milk, chia seeds, nut butter and sugar. Mix to combine. It’s ok if the nut butter is not completely mixed in with the milk, you will have delicious swirls of nut butter to eat later :) Add oats and stir a few more times. Important: press down oats so they are immersed in milk mixture. Cover with lid and refrigerate overnight or at least six hours. Enjoy as is or garnished with fruit, chocolate, or anything your heart desires. Oats will keep refrigerated for 2-3 days.
